How It All Works

1. Select Beef

Browse through our various producers and ranchers to select your beef.

2. Choose Cuts

Select whole, half or quarter beef options for custom butchering.

3. Delivery

Once you have selected your beef and quantity, you will be put in direct contact with the producer. You can arrange payment for your beef and processing. As well as arrange for pick up or delivery.

There are several different parts of the cow that produce different cuts of meat that vary in fat content and tenderness, depending on where the cut of meat is taken from.

Round

Leaner cuts such as round steak, bottom round, and eye round. Good for several dishes, from grilling to stews.

Sirloin

Tender cuts like sirloin, top sirloin, and tri tip.

Short Loin

Large steaks like tbone and porterhouse. Perfect for the grill.

Rib

Cuts like back ribs, ribeye, and prime rib. Great for grilling or slow cooking.

Chuck

Generally thicker cuts for pot roast and slow cooking.

Head

Head-contains the tongue and limited meat along the jawbone that is generally slow cooked to increase flavor and tenderness.
